Pancakes/Pikelets

1 cup self-raising flour

2 tablespoons caster sugar

1 egg, beaten

1 cup milk
-
1 tablespoon butter
-
half teaspoon bi-carbonate soda
|
1) Mix flour, bi-carbonate
soda and sugar. Make a well in the centre of mixture.
2) Add milk to egg and
pour into well. Using a wooden spoon, gradually beat in the flour.
3) Brush frying pan with
a little of the butter. Place over heat.
4) When hot, place mixture
in frying pan to desired size.
5) When bubbles appear
on surface of pancakes, turn with spatula. Allow to brown on other side.
6) serve with maple syrup,
or something else yummy and sweet like jam or lemon and sugar.
NOTE:Can
vary flavour by:
-
adding grated
apple to mixture;
-
don't include
sugar, but put in thinly sliced bacon;
-
use as a
batter, without sugar, for fish.
