Bean Bhaji

- Based on Atia Hosain & Sita Pasricha "Cooking the Indian Way" Sun Books, 1969.

 
  • 1 tin beans (approx. 440g)
  • 1 medium onion, finely chopped
  • tablespoon oil
  • 1 third cup of tomato pasta sauce, or mild tomato salsa.
  • pinch salt
  • 1 teaspoon tumeric
  • half teaspoon chilli (Mexican Chilli powder is good)
  • half teaspoon garam masala 

 

1)  Microwave onion until soft.

2)  Heat oil in small saucepan before adding softened onion. Fry lightly without browning.

3)  Drain bean juice out of can into a glass. Keep juice. Add beans to fry pan.

4)  Add salt, tumeric, chilli and garam masala. Keep stirring.

5)  Add tomato sauce/salsa, still stirring.

6)  When everything is hot and well mixed together, it is ready. Add a little bean juice if it starts to get too dry.
