Chicken & Mushroom Fajitas

  • 1 tablespoon canola oil (if not using teflon pan)
  • 500g chicken breast fillets, thinly sliced
  • 1 red capsicum
  • 175g button mushrooms, sliced
  • 1 medium red onion, halved and thinly sliced
  • 375g jar Fajita Simmer Sauce
  • 2 tablespoons fresh coriander leaves (or 1 heaped teaspoon from jar)
  • Fajita tortillas
  • grated mozzarella cheese
1).  Heat oil in pan, add chicken and cook over medium-high heat, stirring until chicken is almost cooked - still slightly pink.

2).  Add capsicum, mushrooms and onion. Cook, stirring for 2-3 minutes.

3).  Add Fajita Simmer Sauce. Simmer for 5-10 minutes or until mixture is thickened.

4).  Add coriander and mix well.

5).  Heat tortillas according to packet directions.

6).  Place chicken mixture down centre of tortillas, spinkle cheese ontop. Roll up to enclose filling.
